Who doesn’t love a simple, one-pot meal? This old fashioned cowboy stew is perfect for your next camping trip, whether you’re cooking on a gas stove in a camper van or over the charcoal of your campfire. The Hedgecombers gives us the full recipe listed below.
- 6-8 good quality sausages
- 1 onion, chopped
- 4 cloves garlic, finely chopped
- 1 chili, finely chopped
- 1 can mixed beans in water, drained
- 1 can tomatoes
- 1 can baked beans
- Salt & Pepper
Fry the sausages until well colored. Add the onions and sweat down until softened. Tip in the chili & garlic and fry for a couple more minutes. Finally tip in the three cans, bring to a boil then cover and let simmer for 10-15 minutes or until the sauce has thickened and the sausages have cooked through. To stretch it to feed more, serve with rice, pasta or crusty bread.
Basic Version: Substitute canned hot dogs for the sausages, and dried chili flakes for the fresh chili.
